1	lb.	Italian Sausage, cooked & drained
1-1/2 cups frozen bell pepper & onion - stir fry - chopped, if desired*
6 Eggs
1/2 cup Milk
2 cups Shredded Hashbrowns, fresh. If frozen, thaw.
2 cups Shredded Cheddar Cheese (Mild)

Heat oven to 350ºF. Grease a 8x8x2-inch baking dish. Arrange sausage in bottom of dish. Top with bell pepper mixture. In medium bowl, beat eggs & milk; pour over peppers & sausage. Arrange potatoes evenly over egg mixture. Sprinkle with cheddar cheese.

Bake for 55 to 60 minutes, or until firm. Serves 4 to 6.

*If desired, substitute 3/4 cup each chopped bell pepper & onion, cooked.
