Cornbread Burger Bake
2 eggs beaten
1 cup Corn meal
2 tsps baking soda
1 can cream-style corn
1 cup milk
3 Tbsp oil
1 lb. ground beef
1/2 cup onion, chopped
1 tsp chili powder
2 cups grated cheese
1/4 cup green peppers
Combine first 6 ingredients. Set aside. Brown ground beef, drain of fat. Add onions, green peppers,
and chili powder. Pour half of the cornbread mixture into a greased 9-inch casserole dish. Cover
with ground beef mixture and a layer of cheese. Pour the rest of the corn bread mixture over the top.
Bake at 375 degrees for 40 minutes. Serves: 4

Cornbread Pizza!
1-1/2 pounds hamburger (or more, if desired)
1/2 cup onion, chopped fine
1/2 cup green peppers (or less, if desired)
2 cloves garlic (minced or pressed)
2 tsps chili powder
2 ozs tomato sauce
1/2 tsp oregano
Salt & Pepper to taste
1 sm box of cornbread mix (i.e., Jiffy Mix)
1 cup Mozzarella cheese, finely grated
Brown meat, onions and green peppers. Drain fat. Add garlic, tomato sauce,
chili powder, oregano and salt & pepper. Simmer for 15 minutes.
Mix cornbread as stated on box, pour into a long, greased pan. Spread hamburger
mixture over cornbread. Bake in 400 degree (preheated) oven for 15 minutes.
Remove from oven after 15 minutes, sprinkle Mozzarella on top. Bake for 10
additional minutes.

1 cup corn meal, ground
4 Tbsps sugar
3 tsps baking powder
1 tsp salt
1 cup milk
2 eggs, beaten
3 Tbsps Butter (melted or oil)
Mix liquid to dry ingredients. Bake at 400 degrees for 30 to 40 minutes.
DO NOT OVERBAKE! Spread butter or margarine over top while hot.
