Texas Hash



2 lbs. ground beef
3 large onions (3 1/2 inch diameter), sliced
1 large green pepper, chopped
5 large red potatoes, cut and diced
3 (1 lb.) cans tomatoes, whole
1/2 cup uncooked regular rice
1 1/2 Tbsp. Chili powder
2 tsp. salt
l/8 tsp. pepper
In large skillet, cook and stir ground beef, until light brown; drain off fat. In another skillet, add a little oil and fry the diced potatoes, as you would regular fried potatoes. Add onions and green peppers; (onions & peppers can be stirred into potato or beef skillet mixture). After beef mixture is done, stir in tomatoes, rice, chili powder, salt, and pepper. Heat thoroughly. After potatoes are tender from frying, drain and add to beef mixture. Take a knife and fork & slice whole tomatoes while Texas Hash is simmering. Stir completely. Simmer at least 10 more minutes.
